This appetizer has all the delicious classic flavors of French haute cuisine, but with absolutely none of the work! In our book, this is how entertaining should be done. The star of this dish is the Pig & Fig Pâté, a handcrafted terrine from Smoking Goose Meatery in Indianapolis. It is one of our best sellers at Vine & Table and a favorite with the staff.
Pig and Fig Appetizer
2 packages cocktail party toast
6 oz Smoking Goose Pig and Fig Terrine
Slice the terrine in a square diameter, roughly ¼-inch thick and to fit on the party toast. Chiffonade (thinly slice) the spinach, then place on toast, putting a slice of the terrine on top. Then dab a very small bit of Dijon Mustard on top of the terrine. Serve at room temperature.
What do we recommend pairing with this delightful morsel? Well, starting with a white wine option, we’d recommend the Giesen Sauvignon Blanc from New Zeleand, the sweet lemon and cut-grass aromas are a perfect prelude to the acidity, zest and minerals that follow. This is exactly what you want to cut through the richness of the terrine; a perfect pairing.
A fabulous red wine option would be a Chilean offering: Santa Alicia Carmenere Reserva, with its ripe fruit, bitter chocolate notes, good structure and acidy this is a very versatile food wine and pairs exceptionally well with duck and spices.
A third more daring option would be to pair this dish with a whisky. It is amazing how well certain whiskies pair with food! Our recommendation for the Pig and Fig appetizer would be a Jura Scotch or Ardbeg Single Malt (another staff favorite). The slight sweetness of the whisky and the light peaty notes are exactly what the duck wants to elevate this pairing to be greater than the sum of its already exceptional parts.
